A deliciously fragrant and fine textured cake perfect with a cup of tea. The marmalade gives it a lovely flavor and keeps it moist.

Ingredients
  • 2 cups all-purpose flour (300g)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • 1 stick butter (softened) (4 oz/113g)
  • 2 tbsp brown sugar
  • 1 large egg
  • ½ cup chunky marmalade (140g)
  • 1 cup milk (240ml)
  • 2 tbsp powdered sugar
  • Orange rind to decorate
Instructions
  1. Grease and flour a 9 x 5 inch loaf pan. Preheat oven at 350°F (180°C).

  2. In a medium bowl, sift together all-purpose flour, baking powder, baking soda, and cinnamon. Set aside.
  3. In a large bowl cream butter and brown sugar until light and fluffy, about 2 minutes. Beat in egg.

  4. Add flour mixture, marmalade, and milk. Beat on low speed until just combined.

  5. Pour batter into prepared pan. Bake for 50 minutes or until a wooden pick inserted in the center comes out clean.

  6. Cool on wire rack for 10 minutes. Remove from pan and allow cake to cool completely.
  7. Mix powdered sugar with 1 tablespoon cool water in a small bowl. Drizzle over the top of the cake.
  8. Sprinkle orange rind decoratively on the top.
